We’re thrilled to welcome Cha Pang, a brand new addition to our event, introducing a dessert you won’t find anywhere else in Western Australia: freshly made Thai Coconut Pancakes, also known as kanom krok.
The heart and soul behind Cha Pang is rooted in sweet childhood memories and a lifelong craving for food that creates connection. Growing up in Thailand, Cha Pang’s founder fondly remembers watching street vendors craft crispy coconut pillows fresh from the sizzling griddle, handing them over with a smile.
Wanting to bring a piece of that tradition to WA, they began their journey with one special dish: the Thai Coconut Pancake. With a food truck still in the works, they’re currently sharing these secret Thai desserts through their stall—starting with kanom krok, a treat almost no one else offers in WA.

At Cha Pang, authenticity is everything. Each pancake is made with traditional ingredients flown in from Thailand: coconut milk, rice flour, and coconut sugar from the highest quality brands. Fresh toppings like sweetcorn, pumpkin, spring onions, and taro are carefully prepared on the morning of each market day, ensuring every bite bursts with fresh, rich flavour.
The magic happens in a special cast-iron pan, where the base batter bubbles and crisps to perfection before the sweet filling batter is poured in. Watching the pancakes cook is part of the experience—the sizzle, the golden edges forming, the irresistible aroma.
Preparation is no small task—often beginning the night before the market opens—but it’s all worth it to see the joy these little pancakes bring.
